Strawberry protein muffins - Xcore Nutrition

Ingredients for strawberry protein muffins*:

  • 90g blended oats
  • 30g Xcore 100% Whey Hydro Isolate in Strawberry
  • 60g 0% fat Greek yoghurt
  • 105ml coconut/almond milk
  • 1egg white
  • ¼ tbsp melted coconut oil
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt

*makes 6 muffins

How to prepare strawberry protein muffins:

  1. Preheat your oven to 190ºC.
  2. Combine all of the dry ingredients in a mixing bowl: oats, whey, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together the wet ingredients: yoghurt, milk, egg white, coconut oil, and vanilla extract.
  4. Add the wet ingredients to the dry and mix with a spoon.
  5. Immediately spoon the mixture into muffin cases within a baking tray.
  6. Bake for 20-25 mins (insert a toothpick into a muffin and if the toothpick comes out dry, your muffins are done!).
